Zucchini blueberry bread
One of the rare activities which still is not forbidden in Hong Kong during this covid time is hiking. We use to go almost every weekend with children in the mountains and to do hikes. We just bring water and some simple snack for the kids. Last time I brought zucchini blueberry bread which is not too sweet and they were super happy, check the recipe
INGREDIENTS
2 eggs
½ cup of olive oil
½ cup of grated zucchini
1 and ¾ cup or flour
1 tbsp of baking soda
1 cup of blueberries
DIRECTIONS
- Beat the eggs and brown sugar together. Add the oil and continue to beat.
- Mix together soda, salt and flour and then mix those dry ingredients with eggs and sugar.
- When the mixture is completely smooth add the zucchini and blueberries and stir well. Pour into the baking loaf pan and bake at 180 C around one hour.
