White beans and fennel salad

One evening I didn’t know what to eat so I have just decided combine what I have in my fridge. I found fennel, can of white beans, avocado, radishes and lemon. When I put all together on a nice plate that salad even had fancy look. The taste was somehow winterish so I make this salad mainly during winter

Ingredients

  • 2 piece of fresh fennel

  • 200 g of white beans

  • 4-6 pieces of radishes

  • 1 big or two small avocado

  • olive oil

  • Salt

  • Pepper

  • 1 squeezed lemon

DIRECTIONS

  • First cut fennels vertically and then put those slices on a baking sheet paper. Sparkle with olive oil and salt and roast in the oven for 20 minutes at 180 C.
  • Meantime wash and cut radishes into slices. Cut avocado as well. For the beans – the easiest is to use canned beans but if you avoid to use canned food just boil white beans (Don’t forget to soak the beans).
  • When the fennel is done, mix all together and toss with olive oil, lemon juice and salt. Enjoy this winterish taste.
