Veggie sandwiches

We are all in a rush sometimes and almost everybody loves sandwiches. Here is my suggestion for super delicious vegetable sandwiches!

INGREDIENTS

  • two slices wholemeal bread

  • ½ eggplant

  • ½ cup thick tomato sauce

  • ¼ cup cooked green lentils

  • a handful of fresh coriander

  • red pepper

DIRECTIONS

  • Heat wholemeal bread first, and spread it with red sauce. Cut a thick piece of roasted eggplant lengthwise. Place it on the bread, sprinkle each sandwich with one or one and a half spoonfuls of cooked and strained green lentils. Last, sprinkle with sliced coriander and red peppercorns.
