Veggie sandwiches
We are all in a rush sometimes and almost everybody loves sandwiches. Here is my suggestion for super delicious vegetable sandwiches!
INGREDIENTS
two slices wholemeal bread
½ eggplant
½ cup thick tomato sauce
¼ cup cooked green lentils
a handful of fresh coriander
red pepper
DIRECTIONS
- Heat wholemeal bread first, and spread it with red sauce. Cut a thick piece of roasted eggplant lengthwise. Place it on the bread, sprinkle each sandwich with one or one and a half spoonfuls of cooked and strained green lentils. Last, sprinkle with sliced coriander and red peppercorns.
