Sweet potato gnocchi
This recipe was created during my attempt to reduce eating of bad carbs these days. During exploring process I came up with idea to combine sweet potato, oat flour and millet flour. Other ingredients are the same like when we make regular gnocchi (eggs, butter…). And you know … kids were so happy to eat these gnocchi with tomato salsa and pancceta for dinner.
1 big sweet potato
½ cup of oat flour
1 ½ cup of millet flour
½ cup of butter
Pinch of salt
One half of grated parmigiano
- Put sweet potato (previously just washed) in aluminium foil and bake for half an hour at 200 C. Bake until tender and then leave to dry completely. When it is cold, peel of the skin and smash potato in a blender or with hand mixer.
- Then combine sweet potato with other ingredients and make a soft dough. When you have soft dough make a soft dough ball and then cut that ball into four pieces. Prepare lightly floured surface and roll each piece into robe around 2 cm diameter, sparkling with additional millet flour if it is needed.
- Using a sharp knife cut robes into gnocchi. If you want you can make wholes on the gnocchi because like that they will better absorbe the sauce later.
- Put large pot with salted water to boil and when water starts to boil cook gnocchi around 4-6 minutes. Drain them well and mix with some sauce which you like.
