Simple sweet potato salad

If you look for some dinner idea skip regular potatoes and make roasted sweet potatoes instead. Add some curly kale, chickpeas, pecans and goat cheese, pecans and you will get perfect dinner
Roasted sweet potato salad

Ingredients (for 2)

  • 1 big sweet potato

  • 200 g oc curly kale

  • 100 g of chickpeas

  • 150 g of goat cheese

  • 2 big spoons of sesame seeds

  • Olive oil

  • Salt

  • ½ squeezed lemon


  • In oiled non-stick pan grill the slices of sweet potato for 7-10 minutes.
  • Then shortly grill the kale and chickepas (kale you can grill around 1 minutes, and chickpeas around 10 minutes)
  • Split sweet potato, kale, chickpeas intow two bowls and then toss with olive oil, goat cheese, pecans, sesame, salt and lemon juice.
