Light green dinner

I don’t like to eat heavy meals in the evening because I don’t sleep very well if eat heavy food in the evening..because of that very often I am looking for some light dinner combination. This is light vegan and tasty green meal idea which is perfect for weeknights when you don’t want to think too much about what to cook for dinner and to avoid overhelmed feeling after your dinner.

INGREDIENTS

  • ½ of broccoli

  • ½ of cauliflower

  • 300 g of green peas

  • Olive oil

  • Salt

  • ½ of lemon

  • 1 hand full of some micro plants

DIRECTIONS

  • Wash and cut broccoli and cauliflower into two halves, but cut them into vertical pieces – from the top of the crown through the stem. For two servings you can use just one half of broccoli and one half of cauliflower. Meanwhile boil the grean peas in the salted water and prepare non-stick pan where you can grill broccoli and cauliflower. While you cook the green peas, you can start to grill cauliflower and broccoli, previously salted and oiled – grill 5 minutes one side of the broccoli and 5 minutes other side of broccoli. If you notice that broccoli starts to lose fresh green color – you can stop earlier. Repeat the same procedure with caulflower.
  • When green peas is cooked make the puree with hand mixer. Put one piece of grilled broccoli and cauliflower on the plate and top with green peas puree and microplant salad. You can drizzle salad with little bit of squeezed lemon, olive oil and salt.
