Eggplant paté
Until I started blogging, I wasn’t even aware of just how much I love eggplant! Apart from its many good sides, it also has some drawbacks, but it is definitely better to make this spread on your own instead of buying a commercial one filled with preservatives and who knows what other additives.
INGREDIENTS
2 roasted eggplants
3 hard-boiled egg yolks
A handful walnuts
1 clove garlic
A little lemon juice
A handful freshly chopped parsley
One tablespoon olive oil
Pepper and salt to taste
DIRECTIONS
- Roast the eggplants, then peel them and cut into small pieces. Grind the walnuts in a food processor as finely as possible, add a clove of garlic you crushed first, then add hard-boiled egg yolks, chopped eggplant, a tablespoon of oil, fresh juice of half a lemon and parsley. Mix everything well to get a consistent texture. That’s that!
