Salata od cikorije i rukole sa jabukom i tostiranim lešnicima
I think one can never go wrong with a salad. With an addition of rich vibrant colors like in this recipe – my happiness is just endless!
INGREDIENTS (FOR 1)
1 head radicchio (purple-leaved chicory)
1 cup rocket salad
1 red apple
½ cup hazelnuts
1/5 cup apple cider vinegar
1/6 cup olive oil
1 tablespoon honey
- Wash chicory and rocket salad, then leave it to dry. Wash the apple and cut it into slices, then sprinkle it with olive oil and grill it on a grill pan. Two minutes is just enough; when it is done, leave it also to cool.
- In a blender or a regular cup, mix olive oil, apple cider vinegar, honey, pepper and salt.
- In a preheated oven at around 180 C, bake hazelnuts for about 10 minutes on a baking paper.
- Mix dry salad with the prepared dressing, arrange the apples on top and sprinkle with hazelnuts. Enjoy this great salad with a bitter sweet taste!
