Cauliflower rice
Have you ever eaten cauliflower rice? If you are looking for a substitute for regular rice or if you want to make a low-carb meal, this can be a great replacement. Ever since I discovered cauliflower rice, I’ve been adding it to a wide variety of meals.
DIRECTIONS
- All you need to do is to rinse cauliflower first, then grate it or grind it in a good food processor. You can either keep it in a glass container in the frige for 2 days or even longer if you keep it in the freezer in a plastic bag. You can cook it in a non-stick pan with a little oil and salt. If you want it to be really soft, simply cover the pan, and if you want it to keep minimal crunchiness, just leave the pan uncovered.
