For this simple zucchini spaghetti recipe, beside just a few ingredients, you are also going to need a small kitchen appliance used for slicing vegetables into spirals. It isn’t expensive at all, but to me it seems that it is not so easy to find. Even here, where everything comes from the nearby China, it took a while to get this spiralizer.
1 cup shrimps
little salt and pepper
little olive oil
1/4 lemon juice
- Sauté the zucchini spirals in a non-stick grill pan with a little olive oil and salt.
- In another pan, prepare the shrimps by frying them with a bit of oil, a bit of water, salt, pepper and a little garlic.
- While the shrimps are simmering, blend one ripe avocado which you will use as puree.
- Place the zucchini spaghetti on a plate, pour over the mashed avocado in which you previously squeezed a few drops of lemon and top everything with the shrimps.
