Oatmeal pancakes

This is a delicious breakfast or snack for the whole family. The basic recipe is very simple and once you make the pancakes, you can fill them with whatever you want.


  • 1 and ½ cup oat flour

  • 1 banana

  • 2 eggs

  • 1 tablespoon vanilla extract

  • ½ cup almond milk

  • coconut oil for frying

  • Here are my filling suggestions:
  • Blueberries topping heated in a pan together with raspberries and cocoa powder

  • Grated apple drizzled with honey, chopped almonds and cinnamon

  • Matcha powder combined with walnuts and honey


  • Beat the eggs first, then add the banana and mix everything. Add the oat flour and the rest of the ingredients. Make pancakes in a non-stick pan just like regular pancakes.
