Crispy kale bowl

One time I had kale chips, cauliflower rice and roasted pumpkin for leftovers. I combined it all into one bowl and just added a little red pepper and a few drops of lemon juice. Instead of ordering food, I made the most of random leftovers.

INGREDIENTS

  • 1 cup kale chips

  • 1 cup cauliflower rice

  • 1 slice roasted pumpkin

  • little red pepper

  • 1/2 lemon juice

  • a handful of pancetta

DIRECTIONS

  • Cook cauliflower rice in a non-stick pan with a little olive oil and some salt. When cooked, pour it into a bowl and add a few drops of lemon juice.
  • Fry pancetta in a pan until it turns crispy (about 5 minutes) – it is best to allow it to drain on paper towels for a few minutes so as to absorb the excess oil.
  • Add a piece of roasted pumpkin, crispy kale chips, pancetta and season with a bit of red pepper.
